I only eat one.meal a day. Lunch is all I eat, and maybe a candy bar at night. When people eat 3 times a day and do nothing to burn it off...well..diabetus.
It's easy for me to stay thin basically because I'm lactose intolerant.

I need at least 2500-3000 calories per day, so if I spend 10 dollars on a 250 calorie salad I need to spend $100 per day
Fast food is best for maximum cheap calories, but if I had to just sit at home and be cheap, rice and pinto beans is the way to go, and dried beans and rice will last 25 years if stored properly
